Eggplant Salad, is a healthy and low calorie snack for your diet which may help you loose weight.
It may not be everybody's favorite but eggplant is a great health food! It's low in fat and sodium and packed full of dietary fiber, vitamins C and B6 magnesium, phosphorus and pottasium. Eggplants are low in calories and practically fat-free. One cup of eggplant contains a mere 38 calories, it's a perfect diet food if you're thinking of losing weight.
The eggplant has featured in many delicious recipes in the Mediterranean region and there are many ways of cooking it : it may be fried, grilled, baked, sauteed, and even broiled.
Eggplant salad is a very healthy food and can be prepared quite easily. Here is a simple recipe which
can be found in many taverns troughout Greece and Turkey in the form of a "meze" plate to eat with
your raki or ouzo. Later in another article I will provide another more complex form of this salad.
- 1 kg eggplants
- 1 lemon's juice
- 2-3 garlic cloves, crushed
- 1/2 cup of olive oil
- salt and pepper to taste
- 1/2 bunch finely chopped parsley
- 1 small dry onion, finely chopped
Wash the eggplants and pierce them with a fork or knife. Then grill them in the oven, or on the stove, or at your BBQ until they get soft. Peel them and crush them with a fork in a bowl and gradually add the lemon juice while mashing them. Blend the garlic, olive oil, parsley, salt and the chopped onion. Let it rest for some time in your refrigerator before you serve. You can decorate it with tomatoes, black olives, some pickles etc.
